These Smartie Cookies are a fun and easy recipe to make with the kids! They are made with using a basic biscuit recipe and then decorated with delicious smarties on top just before going into the oven. You can make these Smarties Cookies in advance and then simply freeze until you need them. Both regular and Thermomix instructions included.

My boys love helping to decorate these Smartie Biscuits (you can also find conventional instructions here), the only problem is they end up eating more Smarties than they should, and their biscuits are usually a bit overloaded with Smarties! On the plus side, at least they can easily recognise the ones they have made!

Ingredients.

Please note you will find the full ingredient list and instructions in the recipe card below.

  • Butter – either salted or unsalted is fine.
  • Plain Flour – also known as ‘All Purpose Flour’.
  • Desiccated Coconut – this cannot be substituted with coconut flakes. You can omit the coconut if you prefer, simply add an extra ½ cup of flour.
  • Smarties – you will need 200 grams of Smarties for this recipe, I suggest buying a ‘Family Pack’ which is 340 grams and you will have some leftover.

How to Make Smartie Cookies.

  1. Combine the softened butter and sugar in a bowl and using an electric mixer, mix until pale and creamy.
  2. Add the eggs and vanilla extract and mix to combine.
  3. Add the flour, baking powder and coconut and mix until just combined.
  4. Use a teaspoon to scoop the mixture and roll into a ball. Place on the prepared baking tray.
  5. Lightly flatten the top of the biscuits and add the smarties.
  6. Bake until golden.

Tips for Making the BEST Smartie Cookies:

  • It is important to use butter which is at room temperature, as butter which is still chilled will not combine with the sugar.
  • The desiccated coconut can be substituted with flour, I suggest starting with ½ a cup extra.
  • If your mixture is too ‘soft’ add an extra tablespoon or two of flour.
  • Place the Smarties close to each other on the unbaked cookies, they will spread out as the dough expands during baking.
  • This recipe can be doubled.
  • Any unused dough can be frozen.
  • Store the cooked biscuits in an airtight container for up to seven days.
  • The cooked biscuits can also be frozen for up to two months.

Equipment

  • 2 Baking Trays

Ingredients

  • 125 grams butter softened
  • 1 teaspoon vanilla extract
  • 1 cup caster sugar 220 grams
  • 2 eggs
  • 2 cups plain flour 300 grams
  • 1 cup desiccated coconut 85 grams
  • 1 teaspoon baking powder
  • 200 grams Smarties

Instructions

  • Preheat your oven to 190 degrees celsius (fan-forced) and line two trays with baking paper.

  • Place the butter and caster sugar into a bowl of an electric mixer and mix for 5 – 6 minutes or until pale and creamy.

  • Add the vanilla extract and eggs and mix to combine.

  • Add the flour, baking powder and desiccated coconut and mix until just combined.

  • Use a teaspoon to scoop up balls of the cookie mixture and place onto your prepared baking trays. Flatten the surface of the biscuits slightly and decorate with Smarties.

  • Place the trays into your pre-heated oven and bake for 12 – 15 minutes or until the cookies are starting to turn golden.

  • Let the cookies cool on the trays for 10 minutes before transferring to a wire rack to cool completely.

Thermomix Instructions

  • Preheat your oven to 190 degrees celsius (fan-forced) and line two trays with baking paper

  • Place the butter and caster sugar into your Thermomix bowl and mix for 30 seconds on speed 3.

  • Scrape down the sides of the bowl and mix for a further 15 seconds, speed 3 or until pale and creamy.

  • Add the eggs and vanilla extract and mix for 20 seconds on speed 4 to combine.

  • Add the flour, coconut and baking powder and mix for 15 seconds on speed 4 or until combined. Stop after 10 seconds to scrape down the sides.

  • Use a teaspoon to scoop up balls of the cookie mixture and place onto your prepared baking trays. Flatten the surface of the biscuits slightly and decorate with Smarties.

  • Place the trays into your pre-heated oven and bake for 12 – 15 minutes or until the cookies are starting to turn golden.

  • Let the cookies cool on the trays for 10 minutes before transferring to a wire rack to cool completely.
