What? You said Homemade Strawberry Jam in the Instant Pot? Well count me in. Wherever that is happening I want some!

Like many 30 somethings that grew up in the North of England in the 80s and 90s strawberry jam was a staple of the diet.

You always had at least one jar of it in the door of the fridge and then whenever you had some spare bread, then out would come some bread, butter and strawberry jam.

Recipe This | Instant Pot Strawberry Jam (2)It was always amazing and always felt like something luxury when it reality it was not. It was cheap to make, delicious and nearly always served for breakfast on a Saturday morning.

My most fond memories were always of my paternal grandparents serving it up. They loved their jam or marmalade on toast.

On a Saturday they would start the day with a single boiled egg, followed by loads of buttery toast with lots of strawberry jam or orange marmalade.

I never cared much for the marmalade as I always thought that it tasted disgusting (and still do) but the strawberry jam with the melted butter was out of this world amazing.

It would have come from either the supermarket or a Yorkshire jam and pickle shop.

But on the other hand if you have fresh strawberries and an Instant Pot then making your own Instant Pot Strawberry Jam is an absolute must.

When we made our first batch in the Instant Pot we were so, so tired. It was a heat wave and the temperatures was well into the 40’s and we felt like we had been suffocating from global warming.

We had also been up all night comforting our under 3s. As if there is something a toddler and a baby don’t like then it is super hot houses.

But we had a lot of strawberries that needed using up. It was a case of them being super hot and we needed to use them up before they turned and went mouldy. So here we are on little sleep in the heat making strawberry jam.

Thankfully the great thing about theInstant Potis that it is quick and effortless. You probably put more effort into sterilising the jam jars or eating the jam than you do in making the jam.

To make strawberry jam in the Instant Pot is just a few easy ingredients:

Plus, if you want it thick like you buy from the grocery store, then add in some gelatine.

That is still JUST 5 SIMPLE ingredients that are very easy to source.

Here in Portugal everything is always about frugality. So its no surprise that in the hospitals all they seem to give you to snack on is bread and jam.

There was so much of it when I was in hospital having my kids that by the time I came out, I didn’t touch jam for a long time.

Well until now that is!

When we made this Instant Pot Strawberry Jam version it made loads of jars and gave us the chance to give some to our next door neighbour.

She is a lovely elderly lady and is always giving us fresh fruit and vegetables from her allotment so it gave us the chance to give some back.

Plus even though I love strawberry jam I struggle to eat it all in a reasonable time, so a big batch like this would last me months.

Notes

We cooked our Instant Pot Strawberry Jam in the late afternoon, then placed it in the fridge and it was ready to use by late morning of the next day. We recommend 3 medium sized mason jars for your jam making.

ALWAYS sterilise your jam jars before you use them. Because strawberries and raspberries are very similar fruits, you can mix and match them in this Instant Pot Strawberry Jam. Don’t put the fresh strawberries in whole. It will stop the liquid breakdown for the Instant Pot to come to pressure.

Please make sure that you give it 10 minutes NPR, if you don’t you will have a dangerous strawberry explosion. For jelly powder I used a quick half a sachet of strawberry jelly powder. You can use any that you like

FAQs

How do you know when jam is cooked enough? ›

1) The Saucer Test

Once you think that your jam has reached its setting point or has thickened, spoon a bit of the jam on the cold plate and tilt it vertically so the jam runs. You are aiming for a slow descent, not a runny mess. If it runs slow, it's set!

What thickens strawberry jam? ›

Sugar - Sugar will help sweeten your jam but it also helps thicken it. The sugar binds to the water in the fruit and thickens the liquid. Lemon Juice - Lemon juice is great for flavor because it adds that bright acidic taste to all that sugar but it also helps your jam thicken.

Does lemon juice thicken jam? ›

Lemon is crucial to balancing those sweet flavors, but it also helps the pectin to firm up the jam. It can be added at the start of the cooking process or towards the end, but what must be taken into account is that adding liquids to the jam mixture will inevitably require the jam to cook for longer.

Why add lemon juice when making strawberry jam? ›

Adding acid in the form of fresh lemon or lime juice is important for two reasons: First, it makes for a more well-balanced jam, returning some of the acidity lost with the addition of sugar. Second, pectin needs acid to properly activate, or firm up.

How to know when strawberry jam is done? ›

Push your finger through the jam on the plate - you're looking for it to wrinkle and not flood back in to fill the gap. If it's not ready, turn the pan back on, simmer for five minutes and test again.

How do you fix undercooked jam? ›

Spoon all the undercooked jam into a large saucepot. Add about 1 tsp lemon juice for each cup of jam. Bring to a boil and cook until jam sets. Remove from heat and pour into clean jars.

Does jam thicken as it cools down? ›

Yes, jam will be quite runny when it's hot, and then will thicken and set as it cools. Sometimes it can take 24-48 hours for the pectin to fully set.

Will adding more sugar thicken jam? ›

Since pectin is activated by sugar, it requires using a considerable amount of sugar to activate the pectin and set (i.e. thicken) your jam. If you try to cut back on the sugar, it won't set properly.

What happens if you don't put lemon juice in jam? ›

It's Not Only About Pectin

There's another reason why lemon juice is added to most jam recipes: for safe canning and to prevent the growth of bacteria. Bringing the pH level down means jars can be sealed in a regular boiling water bath in a reasonable amount of time (sometimes as little as 10 minutes).

Is jam better with or without pectin? ›

Cooking any mixture of fruit and sugar long enough will result in a jam that will set up in your canning jars. But longer cooking times can mean over-processed flavor, darkened color and a lower yield. Adding pectin allows you to cook jam for a much shorter time, which may result in the jam of your dreams.

What is a substitute for pectin? ›

Pectin Substitute

Cornstarch - Another plant-based thickening agent, cornstarch is a great substitute for pectin. Gelatin - For non-vegan menu items, you can substitute gelatin for pectin, but it will yield a different consistency.

Should you stir jam while it's boiling? ›

5. Do Not Stir Once Mixture Is Boiling. Once your jam/marmalade it has reached a rapid rolling boil do not stir it. Stirring it will alter the temperature of the jam/marmalade meaning it will take longer to reach the setting point.

Can I use bottled lemon juice instead of fresh for jam? ›

You can use bottled lemon juice or fresh. However, I personally look to use other complementary juices to certain fruit jams. Rather than rely on lemon juice I would for example use redcurrant juice from fresh redcurrants in a strawberry jam instead, or an acidic type of apple and apple juice in a blackberry jam etc.

What is the ratio of sugar to fruit when making jam? ›

The amount of sugar you need to make jam depends on the amount of pectin in your chosen fruit, but generally the fruit-to-sugar ratio for traditional jams is 1:1 (ie. 450g/1lb sugar to 450g/1lb fruit).

What consistency should cooked jam be? ›

If the jam runs right off the spoon and looks thin and runny, it's not done yet. However, if it forms thick droplets that hang heavily off the bowl of the utensil, but don't immediately fall off, it is either nearing completion or is done. Use the freezer test.

How do you know when to stop boiling jam? ›

Setting point is 104.5°C. You can tell when jam is reaching setting point as the fast, frothy rolling boil will reduce to a slower, more relaxed boil. The tiny air bubbles disappear, the surface looks glossy and the mixture will feel thicker. Undercook rather than overcook – runny jam can be cooked up again.

Can jam be cooked too long? ›

If, on the other hand, the jam is rock solid, that means you've gone too far and cooked it too long. You can try adding a little water to thin it out, but bear in mind that after overcooking a jam, you can't really get those fresh fruit flavors back.

How long does jam need to cook? ›

Boil until the jam hits the set point, 220 degrees F on an instant-read or candy thermometer, about 20 minutes. Alternatively, place a dish in the freezer ahead of time; a dollop of jam on the cold plate should wrinkle when you nudge it when it's ready.
